|Department: Food & Beverage Service||Job Title: Restaurant Manager|
|Job Summary: The Restaurant Manager under the general guidance of the Food & Beverage coordinates, supervises and directs all aspects of the F&B outlet’s operations to ensure all established service standards and procedures are implemented consistently, leading to guest satisfaction, staff satisfaction and profit for the Hotel.|
► To conduct the functions of the F&B Manager in his absence
► Directs and supervises the activities of the Supervisors, Hostesses, Waiter/Waiteress, Bar-men and Cashiers.
► Responsible for checking the sufficiency of operating equipment and supplies for both table and bar service
► To ensure that all guests are welcomed at the door, escorted and sat in a courteous and helpful manner and that their requirements are met promptly
► Supervises staff activities to maximize revenue and minimize costs.
► To supervise the posting of orders, service of food & drink, billing and allocation of discounts.
► Responsible for proper accounting of all guest cheques and staff tips
► Responsible for updating any menu/beverage changes on the system
► To originate for approval by F&B Manager the general stores requisition, beverage requisition and the kitchen requisition as per weekly/ daily schedules planned.
► Checks at the start and at the end of the shift that all service attendants complete their opening and closing duties
► Prepares details required for pre-meal briefing – out of stock items, reservations, daily specials, VIP reservations, situations of previous day and corrections if any, food & Beverage knowledge test.
► To conduct daily briefings and ensure that shift beginning and shift end briefings are being held at the beginning and end of each shift
► Co-ordinate the preparation of duty rosters and ensure all shift are manned in relation to amount of work
► Responsible for ensuring guest satisfaction on food, drink and service by constantly checking on guests as they dine at the table and where need be take corrective measures.
► Ensure positive guest service in all areas. Respond to complaints, taking any and all appropriate actions to turn dissatisfied guests into return guests.
► Makes endorsement in the logbook at the end of the shift of all guest comments, complains, accidents, unusual events or any matter that will affect the following shift
► Recommends to the Food & Beverage Manager any disciplinary action or commendation to be given to deserving employees.
► Prepares and submits breakage and loss report for operating equipment, for the shift.
► Conducts monthly inventory of operating equipment in coordination with the Revenue Controller.
► To communicate with the Sous Chef on particular guests’ requirements, and maintain a close and professional working relationship with the kitchen at all times
► Responsible for training and development of staff through orientation of new staff, ongoing feedback, establishment of performance expectations and by conducting performance reviews.
► Assist the Food & Beverage Manager in conducting staff appraisals
► To ensure that at all time, all staff in the department are correctly and smartly dressed as per grooming standards.
► To participate in any training/development schemes required by management
► Participate in the hotel’s social responsibility programme
► To follow the house rules and policies laid down by the management

► Diploma/Degree in Hotel Management course
► 3 years experience in 4/5 star property in F&B
► Good organisation skills, fast and efficient while remaining calm
► Well groomed and presentable
► High levels of integrity
